Dimche says that they expect many excellent brandies, many awards and gold medals with satisfied customers.
Dimche tells us that the family tradition of brandy production in his family dates back to 1972 when his grandfather began crafting the vineyard story. After his grandfather, the legacy was passed down to his father, and today Dimche continues the story.
"In our family, there has always been a strict principle in brandy production. It must be pure and natural grape brandy, naturally colored with woods and stone fruits. We would never think of using artificial flavors and colors," says Dimche, adding that many of their regular customers notice this.
Around 2018, Dimche inherited the family vineyards and began producing brandy independently. The brandy is exclusively made from the Naumovi family's vineyards, and the reason they started producing brandy in larger quantities was the low purchase price of grapes, as well as the successes they achieved at various competitions.
At the very beginning, when Dimche inherited the vineyards, he started producing several types of distilled brandy. Through constant tasting over time, he realized that the longer it aged, the more impressive the taste, color, and aromas became. As a result, Dimche decided to send his brandy to a competition, where to his pleasant surprise, he won a gold medal. This award encouraged him to send brandy to Serbia for a major international competition, where he again won a gold medal in fierce competition. The success motivated Dimche to open his own distillery.
"Another important motivation for me is that I have the urge, aside from the many corruptions that are happening to brandy by producers who only want to sell volume, to offer the final consumer pure brandy with natural aromas. Every time I send brandy to my clients, their reactions are: 'What have we been drinking until now?' These comments encourage us to invest in quality," says Dimche.
From 2018 to 2022, they worked on several types of distilled brandy. Some were aged in oak barrels, and they also worked on the gold award-winning brandy, which ages with several types of wood and an old family recipe that Dimche's father developed over the years.
Along with the distillery, the Enoh winery was also founded and developed. They produce wine in the same old and traditional manner, without technology. Dimche says that, fortunately, they manage to make good wine. This year, for the first time, they successfully produced Chardonnay from their own vineyard, which is a light wine that can be consumed in various amounts.
Dimche aims to produce larger quantities of Chardonnay, red Merlot, and white Rkatsiteli wines, all from their own vineyards. They are also working on creating a tasting room in an old stone-walled room, which they hope to achieve in the near future.
The vineyards of Enoh are located in the village of Pepelishte, Negotino, where the distillery and winery are also situated. They also have a tasting room in the central area of the city of Kavadarci at 4 Iljo Kostov Street.
