This dish is a blend of ingredients commonly found in Macedonian gardens—pearl onions, garlic, meat (veal and pork for the meat version, or mushrooms for the vegetarian option), dried plums, white wine, and an assortment of spices, with one key ingredient: a generous amount of LOVE.

Named after Dimche’s granddaughter, Sofija, who enjoyed certain ingredients every day, Dimche made it his mission to combine those ingredients into a salad that is simple, yet unique, refreshing, and full of flavor. The salad features grated cabbage, chopped tomatoes, walnuts, crumbled cheese, grated yellow cheese, spices, olive oil, salt, basil, and oregano. Broccoli is added, both as a garnish and an integral part of the dish, symbolizing Sofija's hair to Dimche.
