Prespa’s apples have been the subject of many tales,
including Ana’s story about the "Spirit of Prespa," a destination now
popular among international tourists. However, this narrative takes a unique
turn. For the first time, we introduce a Macedonian producer whose passion has
culminated in creating pure apple juice.

let us share Nikola Dzjakov's inspiring journey. An electrical engineer by
profession, Nikola’s deep connection to his family’s orchards transformed a
mere hobby into his primary occupation.
Speaking to Kajak.mk, Nikola recalls growing up in the
orchards, learning the trade from his father, grandfather, and close family
friends. Over the years, he inherited their knowledge, enabling him to take
over the cultivation of apples entirely.

Every craft comes with its joys and challenges. While apple farming can be a fulfilling passion, it’s not without stress—particularly concerning the fluctuating and often unprofitable market prices for fresh apples. This challenge inspired Nikola to embark on a new chapter by creating natural apple juice under the brand "Carev Dvor Juice."
Last year, Nikola began producing and testing the juice,
focusing on shelf life and quality. This year, the product entered the market.
Today, the "Homemade Pressed Apple Juice" from Carev Dvor boasts a
full production chain. Nikola notes that while selling fresh apples is simpler
and less demanding, producing juice requires strict hygiene standards,
meticulous oversight, and an unwavering commitment to natural methods—no
chemicals or sprays allowed.

Currently, half of Nikola’s orchard is dedicated to juice
production, with the other half reserved for standard apple sales. His wife and
two sons actively support the endeavor. This year, the juice has already been
showcased at two food fairs in Macedonia, with plans for broader availability
at future events.
