Daniela Mandrovska dedicates her life
to cultivating a local homemade pepper in Bukovo, a village on Pelister
Mountain. As a devoted wife and mother of two daughters, she is also a key
producer of Macedonian bukovska pepper, a spice that is set to gain worldwide
popularity.
Daniela expressed that producing
homemade pepper has been a family tradition for many years, and she takes great
pride in continuing this practice to pass it on to future generations.
Set high in the stunning landscape at
an elevation of 750 meters above sea level, the journey of Bukovka pepper
begins in the charming village of Bukovo. Here, Daniela and her family
passionately cultivate these remarkable peppers, using an exclusive variety of
seeds that are unique to their land. These authentic Bukovo seeds thrive only
in this specific region, imparting an unparalleled flavor and character to the
peppers that you simply can't find elsewhere.
Daniela uses traditional cultivation
methods, avoiding modern machinery to ensure each pepper is carefully nurtured.
Every step of the process is done by hand, allowing for outstanding care and
attention to detail. Their commitment to quality and natural peppers is evident
in their slow, intentional methods and specialized tools. Taste the difference
that tradition and passion bring with Bukovka peppers!
From the same natural peppers, they
produce Bukovska crushed pepper—both hot and regular—as well as Bukovska red
pepper. They also offer Bukovska mint. Each unique flavour requires time and
patience; Daniela explains that the process from field to table takes nearly
six months.
The process begins with spring
planting in beds, followed by transplanting the grown plants into the fields in
May. Cultivation is a crucial stage that requires dedicated care and attention.
Peppers need regular tillage, watering, and pest control. Harvesting starts in
August with the first ripe red pepper.
After the peppers are harvested, they are strung together, and the drying process begins outdoors while it is still warm. When the autumn rain arrives, the semi-dried peppers are transferred to small heated rooms equipped with an oven that can reach temperatures of up to 80 degrees Celsius. These rooms are known as drying rooms and represent the final stage of drying the peppers. Once fully dried, the peppers are crushed in a wooden barrel using a pestle, as explained by Daniela.
