Growing Microgreens: A Taste of True Difference

While our reading today may not be directly related to tourism in Macedonia, we are delighted to share the story of Sanja Bačevski, a graduate horticultural engineer.

Sanja has an interesting approach to growing and selling plants. This time, however, we’re talking about plants in the early stages of growth and development, known as microgreens. For those hearing the term for the first time, these are vegetables larger than sprouts but smaller than baby vegetables, yet still perfect for consumption.

Sanja explains that these are the same vegetables we eat every day, but they are harvested in the early phase of growth and development. The production technology is much different from traditional vegetable cultivation. These microgreens are grown in a space with strictly controlled conditions, with particular attention to temperature, humidity, light, and water. The seeds must be organic and untreated, and during the production process, no chemicals are used, ensuring it remains organic.

You’re probably wondering how they are consumed.
Microgreens are eaten just like other salads. They must be fresh, rather than heat-processed. These fresh plants are perfect as toppings for sandwiches, soups, meats, pasta, or any dish. Each microgreen has a unique flavour, meaning it can be combined according to the chef's preferences.

Microgreens contain far more vitamins, minerals, amino acids, and antioxidants compared to the same vegetables when fully grown. Some of them contain up to 40 times more nutrients than the mature plant. They have very specific flavours, intense colours, and decorative stems. These herbs can be produced in a small space, meaning you can grow them in the apartment you live in.


Sanja says that there is an increasing demand, especially in Ohrid, where she lives. She is directly connected with restaurants and hotels that serve food to tourists. In addition to restaurants, Sanja mentions that there is slowly a growing awareness among people about consuming healthy plants like microgreens.
