Crafting a Wine Story from the Hidden Flavors of the Grapes
The arrival of spring and the nice weather motivated the team at kajak.mk to take a tour of one of the most famous wine regions in our country and to get acquainted with another family winery.
Opened in 2023, the "Poetika" winery is located in Kavadarci and registered with the Ministry of Agriculture, Forestry, and Water Economy. The winery states that its opening is linked to one of the fundamental ideas of life, which is that life is creation, but also an opportunity to experience everything that this world offers. Respecting tradition while also embracing scientific advancements in the field of winemaking, the idea begins to materialize, turning the product from vine plantations into wine. At the very beginning, they hired a professional (technologist-enologist) who is directly involved in the entire production process, followed by the acquisition of the necessary equipment.
"As for the vine plantations, we have 15 hectares of our own vineyards where we grow the varieties of Stanushina (our only indigenous variety), Zilavka, Smederevka, and Vranec. On the other hand, we have cooperators from whom we have secured the varieties Merlot, Cabernet Sauvignon, Chardonnay, and Semillon. Each wine is stored in glass bottles of 0.75dl, labeled with the winery's logo, the release numbers for distribution, and all the information through which the consumer can get to know the characteristics of the wine. We set ourselves the task of turning the most beautiful grape into the most beautiful drop of wine and are constantly working towards improving quality," say the winery representatives.
Klime, the head of the winery, says it is of immense gratitude to transform every hidden aroma in the grape into a drop of wine, a wine that will reveal the hidden and preserve the uncovered aromas and flavors.
"We have created and will continue to create wines whose process is based on our authentic philosophy, characterized by a distinctive approach, respect, and nurturing of tradition, with love for the grape and wine, and with high expertise in cultivating every grape and wine variety that is needed," says Klime.
He adds that their dedication and approach have been crowned with awards from the very first competition where they entered their wines. This year, for the holiday of "St. Trifun," a competition was held by the Wine Producers Association "VINOTEKA" from Kavadarci, which has been held for several years in a row. For the rosé wine made from the Stanushina variety, they won a gold medal and a bronze cup; for the Chardonnay variety, they won a gold medal, and for the Smederevka and Merlot varieties, they won a silver medal. This experience serves as motivation and also aligns with their vision for preserving and enriching wine culture, expanding production by varieties and quantity in accordance with their philosophy.
For the "Poetika" winery, wine is love and a civilization achievement that must be preserved by both current and future generations. It brings people together and provides them with pleasant feelings and lasting pleasure.
