Meet Viktor: The Maestro of Neapolitan Pizza

That is why we are adding another experience to our collection of authentic experiences, now available to book through kajak.mk: a hands-on workshop where you can learn how to make authentic Neapolitan pizza with Viktor — or, as we like to call him, the Maestro of Neapolitan Pizza.

But Viktor’s story does not begin with a dream of becoming a pizza maker. Quite the opposite. A professional chef by trade, more than a decade ago he never imagined himself entering the world of pizza. That changed when, at a restaurant where he worked, he had his first real encounter with pizza dough.

“Before that, as a professional chef, I could never have imagined that I would be making pizza. But when I first started working with real dough, I realized this was it. You could say it was love at first sight — and first touch,” Viktor recalls.

And so began a story that has lasted for more than a decade. Day after day, dough after dough, pizza after pizza. Viktor learned, experimented, made mistakes, started over, and refined the process until he developed his own recipe for Neapolitan dough — the one he still uses today.

And when you ask him what the secret to a great pizza is, he won’t tell you there is one magical ingredient.

“It all starts with the dough. Then come the fresh ingredients, and finally, the oven does its part. We use high-quality Italian flour, and the dough ferments for at least 48 hours. That is what gives it its light, airy interior, crisp crust, beautiful bubbles, and that unmistakable leopard-spotted finish.”


And then comes the fire.

A temperature of over 400°C and just around 60 seconds in the oven. That is all it takes for a carefully prepared ball of dough to become an authentic Neapolitan pizza.

But this time, we don’t want Viktor to simply make the pizza for you.

We want you to get your hands covered in flour.

The new experience you can book through kajak.mk is a hands-on gastronomic workshop where Viktor will welcome you into his world. You’ll learn how to work with the dough, prepare the sauce, choose and combine ingredients, and, of course, shape the pizza properly.

Each participant gets the chance to prepare their own pizza from start to finish — shaping the dough, choosing the toppings, and baking it in a professional pizza oven. And the best part of the experience comes at the end: there are no grades and no tests, just a tasting of what you’ve created yourself.

If you leave the choice to the Maestro, Viktor recommends the Vicecity Bianca — a pizza with an unexpected combination of flavors that he considers one of the signature choices on his menu.

But we at kajak.mk had one more question for him: What kind of pizza would you create if you brought Italy and Macedonia together?

The answer came quickly.

“I would make a pizza with ajvar, olives, and sheep’s cheese. That would be my Macedonian twist on Neapolitan pizza.”

And honestly, after an answer like that, we think this pizza deserves to find its way into the oven one day.

Viktor’s workshop is designed for all curious food lovers — individuals, couples, families, and groups. It can also be organized as a private gastronomic experience or as a different kind of team-building activity for companies.

The experience includes professional guidance from a pizza master, hands-on work with dough, sauce preparation, choosing and combining ingredients, preparing and shaping your own pizza, baking it in a professional oven, all the necessary ingredients and materials, and, of course — a tasting.
